10 Ingredients

7 Tablespoons = 50g
3 Tablespoons = 20g
1 Cup Water = 250g
Half Teaspoon = 2g
5 packs = 1g
1 Teaspoons = 4g
3 Tablespoons = 20g
1/8 Cup = 20g

Step 1

Preheat your oven to 180 degrees. Then grease your muffin pans or use silicone cupcake liners if you don't want to use any fat.

Step 2

Let's prepare the pie crust first: In a food processor, mix the oat bran (or the flour of your choice), the nuts, cinnamon, baking powder and 1 sweetener. Then add 2 tablespoons of water and pulse until well combined. The dough has to hold together well when squeezed. If necessary, add more water, but only 1 tablespoon at a time. Then divide the dough into 2 parts per mini-pie - One for the base and one for the cover. So if you make 2 pies, that's 4 parts.

Step 3

Press you base mixture into the muffin tins and form the base mold with your fingers. Then roll out the remaining dough on a lightly floured surface.

Step 4

The filling: Peel and core the apples, then cut them it in small slices and mix with cinnamon and one bag of sweetener. Cook the apples with the rest of the water in a saucepan over medium heat. Remove the pan after 5-8 minutes, when the apples start to soften and caramelize.

Step 5

Now for the creamy filling: Put the quark cheese, milk, protein powder and the rest of the sweeteners into a blender and blend until you have a nice smooth cream.

Step 6

Finally, pour the quark-cream into the muffin bowls and add a layer of apples on top. Cover your pies with the remaining dough and then trim and seal the edges. You can decorate the top of your pies anyway you like or just leave them plain. If you want a crispy crust, decorate the top a little.

Step 7

Bake for 20 - 25 minutes or until the crust is light brown. Transfer your apple pies to a wire rack and let them cool.
